power of atty...just wondering

who signs the notary journal when you do a power of attorney and the person signs with an "X"? Also where does the persons name go.... the one giving the power of attorney? I have read my handbook but it does not answer my question.
Just wondering don't know if I would like doing them.....or is it easier than I think?
