date on docs vs actual signing date

Being fairly new at this, my question is how do you handle a file when the date on the docs (usually e-docs) can be 2-3 days ago and when you go to have to client sign I know they are to date everything the actual date. On the notice to cancel I have been having the client cross out the date and change it to the actual date with initials. Please comment on procedure with this, as I have had it happen on a number of files.

That is fine. Obvioulsy the docs are not date sensitive.
Just so long as the signers date the date they are signing, your notary certificate is dated correctly and the RTC dates are changed to reflect the correct dates - so you did fine.
