I've been doing some reflecting regarding my journal and wanted to ask about entries. When you have 5+ docs to notarize would it be appropriate to just make one journal entry instead of 5 entries?

Not if you have the standard journal. The Notary Rotary journal you can make 5 entries on one line. Check it out in the notary supplies.
