Grant deed

On a California(or any state) grant deed, they have the lines that state something like "Documentary tax transfer $___. That amount is sometimes left blank. Is it okay to still notarize the document? I have been told that when it goes to record it is filled in.

It is filled in when sent for recording. I don't consider it being a blank within the deed because it is not in the body of the document. When I worked as a closer in a TC we would hand write the doc stamp amount, Int. tax amt. and the recording fee by hand in the margin of the doc. So, to me - not a blank in the doc. FWIW Smile

You're okay - and yes it is...no County Recorder will accept a deed without the transfer tax written in by the title company.
