Aside from making sure the signers before you are the people in the document I don't think it would be our job to determine what is or isn't in the best interests or whether the contents are truthful. We could ask them to confirm the document contents or acknowledge their signature but if there are doubts and you believe people don't know what they're asking for or signing then I too would step back and suggest a lawyer be consulted. But that's just me, I don't have a ton of experience on this.
