I use a LOT of coffee grounds, about 10 lbs a week into the compost pile. It's high in nitrogen and feeds the bacteria. That is called "green" stuff to add to compost, along with other high nitrogen items like grass, kitchen fruit and vegetable scraps, etc.
About half of the pile should consist of "browns" that fungi feed off of. Leaves, twigs, paper, cardboard, pine needles, sawdust, etc.
Good compost will have plenty of worms, and of course worm castings, or vermicompost, just names for worm poop. Worm castings are among the highest in nitrogen and other beneficial minerals to add to your soil. So the expression, "I guess I'll go eat worms" is truer than you might imagine.
I just turned my compost pile yesterday and added a bunch of browns and greens. Was nice to see plenty of worms. Worms are your friends.
