Really interesting stuff, Bear! Thanks. I've heard Dr. Furhman talk before (probably on PBS), but I clearly needed a refresher. I guess that sometimes changes happen over a period of time - and maybe I'm just more receptive than ever, although I've already incorporated some of the things he recommends. I eat lots of mushrooms and nearly always slice green onions onto my salads. Maybe I'll start including more red onions, too... With the recent romaine lettuce scare, I also started eating more red and green cabbage. (Furhman didn't say so, but I think I've read that cruciferous veggies are healthier when at least slightly cooked.)
I agree that the info on beans was excellent. Seems like that's a great area to focus on, especially when trying to reduce animal proteins. Now that I'm not working as much as I used to, I expect I'll be more successful at making changes! |
