Did you ask grandma (especially since she is presumably 60yo+) any questions to assess her CAPACITY and that she was signing VOLUNTARILY to ensure that she was not being unduly influenced into signing the deed? And more importantly, did you DOCUMENT her answers in your journal? If you did, that will go a long way to show that you fulfilled your notarial duties. If you did not document these things in your journal (consider doing so in the future) ... and for this particular notarization, write notes of all specifics you can now recall from that notarization and take them to court with you (how you determined that she seemed aware of what she was doing, what she was signing, that she did not seem nervous, etc).
