I was fortunate to get my hands on a couple of loan packages from a few different companies before my first signing (there are several books that have copies as well). It helped a great deal. Study each doc, make sure you have an understanding of it's purpose. I put sticky notes on each page with a one or two line explanation and practiced out loud. Don't freak out too much about missing a notarization during the signing. You can go through the docs after the signing on your own time. You'll start to figure out which docs generally get notarized. When you're done with the signing, go through the docs again before leaving the borrowers home to make sure you haven't missed any of their signatures or initials.
