Notarizing a will and testament in California

Hello,

I have a couple of questions. I will be notarizing a will and testament today and have never done this type of document before. I also have not notarized since 2021. I have two questions:
1)Is this like any other notarial act? Are there witnesses involved? Any special considerations?
2)I received a new journal when I renewed my commission, do I use this new journal or do I continue to use my old journal? My old journal still has plenty of blank pages.
