I'm similar to Yoli and Lee - When I print the document package, I check the notary sections. If California compliant, I complete the venue and my name. At the signing, after the client has signed the document, I date, complete the signer's name, circle the appropriate pronouns and such, sign and stamp the document and then flip it over into the "completed" stack of documents.
Now, sometimes, when meeting at a coffee shop, the signer is eager to leave when their part is done. So, I could be left there alone completing my notary certificates.
