You can avoid sharing the account number by taking the check to the bank in person, endorsing it with just your signature, and depositing or cashing it. They'll still find out which bank you did business with. Most of us wouldn't find it worth the trouble for most outfits we deal with, but I suppose if it was a really questionable customer, it might be worth it.
