I don't mind fax backs. As long as they give me a toll free number. 
As for putting them back in order, I have a system that works pretty well for me. I use sticky notes. I write the name of the document on it that I'm faxing. I put the sticky note on the page in front of it in the loan package, like a bookmark. When I want to put the documents back in order I just find the sticky notes.
