I took 6 weeks off last year, too, starting in mid-March, then decided to do signing outside with masks. All of mine have been done that way because I ask about it up front when I confirm (although I've forgotten a few times). I've had a very few give a tiny bit of push-back, but then agree to go along.
I only lost one assignment (for a company I've never worked with before), where a 3rd party was coordinating the appointment. My guess is that the signers themselves wouldn't have minded, but I never had the chance to find out. When she firmly resisted, I just nicely told her I'd contact my client and have someone else assigned. I was fine with that.
I agree that people are free to do whatever they want in their own homes, but I don't have to go along with it. For all I know, my next appointment could be with a very elderly person or someone who is immunocompromised.
It seems that most of us have established our own parameters that work for us, which is how it should be. I caught myself wondering the other day, though, about some voices that have completely disappeared from this forum in the past year or so. We'll probably never know who they are or how many, or the reasons why...
