CA Civil Code 1189 does not contain an answer, but the title of the chapter that contains it gives a clue: "ARTICLE 3. Proof and Acknowledgment of Instruments [1180 - 1207] ( Article 3 enacted 1872. )"
Section 1195 begins "(a) Proof of the execution of an instrument, when not acknowledged, may be made by any of the following:"
So I'm persuaded that "proof" refers to "proof of execution". The procedure looks complicated and prone to controversy; I'm glad that in VT only courts can do it.
