I can't imagine responding in any other way than you did. There would have been no point in writing a nasty response to them (especially if you care about getting work from them again). Sometimes, the truth IS actually the best answer :-)

Speaking from personal experience, I have lost out on several jobs where they wanted it signed, scanned and shipped the same day in a timeframe that was just not realistic. I would tell them that I would try my best but could not guarantee to meet their schedule, due to the lateness of the signing. I mean....when a signing is at 3:00 pm an hour away from me and they want you to guarantee that it gets signed, scanned and makes that day's Fedex or UPS, when the cutoff is 4:30, it becomes a really shaky scenario and I have no qualms about telling them that.
