Many Alzheimer's patients are not always incognizant. Some days they suffer with dementia, and some days they are well aware of EVERYTHING. The disease affects everyone differently, so my best advice would be to have a little one-on-one time with the signer. See if the aunt understands what she is signing, have her tell you what the DPOA is for. She might be having a cognizant day, and IMO, if she comprehends, she is able to sign.
