IMHO I would not return to the signing. In addition to the problem w/using a Credible Witness, that you cited, I suspect the signers would not be too friendly considering that you refused to sign using her nick name in the first place. That & the snafu with the other signers ID, even though it got ironed out, seems like two strikes already in this inning. * And, in California, the SOS doesn't let one use supporting documentation --- ie utility bills, an AKA affidavit, social security card, ect --- to shore up a shaky or questionable ID. Ultimately the borrower will have to get an ID that reflects they're legal name & the way they want they're property vested at the county recorders office. And while it means a trip to the DMV for the borrower, it is better than you, the Notary, trying to piece together the satisfactory evidence required. I would suggest to the signing service that the signer needs a proper ID, and walk away from this signing.
