I’m big on using herbs/spices. They’re nutrient rich, as well as making food taste good. A friend of mine turned me on to a quick and easy Indian seasoning trio – cumin/coriander/fennel (all in powder form). It’s just fantastic for gut health. It can be sprinkled on salad or put into a hot dish. I like it with tofu dishes.
My recipe for today :-) Sauté ginger/garlic/onion, then add tofu and a small portion of garbanzo beans. Season with an ample amount of cumin/coriander/fennel. Add fresh (or diced) tomatoes, and a veggie (like cauliflower). Continue to simmer a few minutes, add more seasoning if needed, then season to taste with black pepper and coco aminos. If you want to add some extra flare, add toasted cashews, raisins, or artichoke hearts… and top with fresh cilantro and green onions upon serving. Serve over brown rice with a side of any steamed veggies (can be topped with a peanut or tahini sauce), and a kale/cucumber/tomato salad.
Also for the digestive system, instead of drinking plain water, it can be fun to drink cold herbal tea. In a thermos, I brew fresh ginger slices, star anise pods, slippery elm powder, and cinnamon (great for blood sugar). Refrigerate and drink as desired. It’s super tasty cold with a lemon slice, and it is so freaking good for your gut!
Our solar installation crew had to come back and fix our inverter that went on the fritz. They remembered us (3 years later) by the tea that I served them, and asked for it by special request. Very sweet. :-) |
