I understand what the non borrowing spouse is required to sign, But do they also sign the Occupancy Affidavit How about Error and Ommissions Compliance Agreement.

Sometimes yes and sometimes no. Only your hiring party or title/lender can answer that for you. I have seen them have to sign these and other times they did not.
