I just saw an Acknowledgement with the wording "and did not take an oath" is this ok?

It was a general ack. to be attached to a document.

You do not administer an oath for an acknowledgment, so the wording "did not take an oath" is appropriate for acknowledgments.

If the wording has the option ("did/did not take an oath") you need to cross out the "did" since oaths are only administered for jurats, not acknowledgments.

The wordings did or did not take an oath are obsolete these days, but some companies still put them on the certificates.
As it was an acknowledgement the wording is appropriate as the signer was not under oath for the acknowledgement.

If you come across the words "did/did not" just X through the incorrect words,
