What do you think about this?
I ran into a old friend which is also a notary at the courthouse today. She was telling why she was there and about a signing company refusing to pay because in so many words she was incompedent. Now, this lady has been working at this for a while so I know she isn't green. They said her work was so bad they had to reclose. She was in the courthouse checking for her documents. She told me that if her work was so bad why was the 1st, 2nd mortgage and warranty deed that she had notazied was recorded. Any ideas?

Good question as long as the deeds / mortgages were notarized by your friend and not done by another notary.

I would have her get 2 sets of certified copies. Write a nice letter asking for payment and send one set of the certified copies along with her letter. JMHO

Certified copies in Texas are $2 for the first, and $1 for each page thereafter. That could run into about $20-$34. Maybe just get the file mark info and try that to start.
