I can give you two answers to that question <g>
In California notaries are advised not to do wills unless under an attorney's direction, you are advised to refer the signer to an attorney.
When a will is notarized it is usually the witnesses signatures that are notarized to make the will self-proving, which is why the notary cannot be a witness to the will.
