Is it unethical for me to notarize signatures of people signing election petitions when my husband is on the petitions as a person running for that office?

I wouldn't do it. Any hint of impropriety could be trouble for your husband's potential political position and your notary commission.

Do you have at least one of those television news reporters that seems to get the dirt and the low down on all the stuff? How do you think it would look to the viewing/voting audience?

If you state laws don't dictate what to do (or not to do) ask yourself if it is really worth it. I've worked elections before and I would ask the city/township election clerk for direction.

Chances are you are doing no wrong, but you know how a story can get twisted.

You would not be an impartial witness - conflict of interest.
