Perhaps you should ask a translator? A notary who is bilingual can not change them from Spanish to English (or vice verse). And notarizing the document does not make it 'legal'.

If the truth be known and if mortgage lenders were in compliance these docs should be explained in a manner whether it is english, spanish or what ever before we get there. The details should have already been gone over and we are there to have the documents witnessed and signed properly.

I would contact the local school district and ask them. If they can't do it they should be able to point you in the right direction.
