All public records in the state of Florida are or will soon be, available for search online. You can go to http://www.myfloridacounty.com/services/officialrecords_intro.shtml for more info and see which counties are currently online. Links to the appropriate county office responsible for public records can be found by doing a search for "<county> FLORIDA PUBLIC RECORDS". Most often, the Clerk of the Court will maintain the public records, however, some counties do not. Orange County, for example, public records are maintained by the Orange County Comptroller.

Death certificates are public records and maintained as such. That's why I said public records. Though death certificates are not placed online for viewing, some information from the record is public and can be searched.
Certified copies of Death Certificates authorized for issuance by the Department of Health, which exclude the information that is confidential under s. 382.008, and certified copies of Death Certificates issued by another state whether or not they exclude the information described as confidential in s. 382.008 are maintained by the designated custodian of the official records.

But you are right, death certificates are vital records. In Florida, certain information from the actual certificate is not made public. This has been fought in court many times and usually, the court has ruled that the information be made a public record. If the certified copy of the death certificate contains information deemed confidential pursuant to F.S. 382.008(6), the filing party or the Clerk shall conceal the cause-of-death section of the death certificate prior to its recordation with a slip of paper stating: "This section deleted per F.S. 382.008 and F.S. 382.025."

Death certificates are only available to immediate family or by court order. They are not automatically recorded in the public records office. You can contact the the Department of Vital Statistics in Jacksonville.
