I am getting calls from various companies who are asking how many signings have I done and how long have I done the job. Then respond by saying they want someone who has done at least a hundred. Slap me in the face but you called me. I am "green" forgive me for not being born with the notary stamp in one hand and the seal in the other.
I am efficient and maticulous.......Do those words count for anything?

You need to figure out a better way to market yourself...a way to key in on what you CAN do over and above what you do not have yet.
Do you have legal, mortgage or title experience?
My first "field agent" type job was to be a secret shopper...then I got inspections because that's very similar work. I got merchandising jobs...that's helpful to getting inspections.
My requirements were waived on 100+ or one year signings because I was a former legal secretary...a former mortgage processor...my parents had been developers.
If you can give anything positive back when they waiver, do so.

Used to be a dedicated Mystersy SHopper here too...
I still do those occasionally, but not on a regular basis... I loved Mystery SHopping and That experience has helped me in my current job as well as in the notary field.

I used to do inspections and weatherizations for a nationwide property management company. Every once in a while they would try to get me to pose as a prospective renter at some of their townhouses. Nope, not me!

I never did those either, Lawrence. I did little fun shopping jobs but when they started having me make up tall tales - no thank you....I'm not a liar and pretending to lie (is that an oxymoron) for the purpose of these nutty marketing companies to do market research - no thank you.
I really think that the original SS gigs were good...then they got cut by services collecting and brokering the shoppers services. When I was offered $10 for a shop I laughed my head off.
It's a shoe in that if you send a woman into shop she's going to spend $50 at least. I think SS's boosted their sales!!!
