Actually, as a Notary, the signer can date any date
as directed by L/O or otherwise, even if you are notarizing, so long as the date of your notariztion is as of the date they they appear before you and either execute or acknowledge that they have executed the doc. Sometimes a grant deed may need to be dated earlier than the date of signing so as to agree with the date of the mortgage and note. Not a problem for you as the notary so long as you are not backdating your notariztion.
