If I enter the incorrect date in my notary book, is it ok to cross it out and change it?

Initials not necessary since you are supposed to.......
be the ONLY person to write (aside from borrower signatures) in your journal.

I initial it in case I'm called into court and need to prove
a signing by my journal. Then, having the correct date COULD be used against/for the plaintiff/defendant. There....that's my 2.5 cents worth :-)

I initial any correction I make in my journal, just as I do on my notary certificates. Most books on loan signing will tell you to initial any corrections. That proves that you the notary did the correction.
