If the docs are being overnighted to the borrower, the borrower's copy is usually included (if not, it's not your problem...). If the docs are being overnighted to you, ask whether there will be a copy for the borrowers included - otherwise, you may incur extra expense you weren't expecting for copying docs .
As for what type of folder - it's entirely up to you. Personally, I put the borrower's copies in a manila envelope that stays in my bag until the signing is completed; I tell them up front that I have a copy of the paperwork for them, but don't show it or offer it until everything is signed.
One thing you should be aware of when receiving edocs - by law, each borrower gets 2 copies of the RTC. There may not be enough copies of that document when you print out the package - you should review the packet you're going to leave with the borrower to make sure you've got that covered, or print out additional copies of the RTC if necessary.
