Adobe Professional
I use Adobe Professional, it adds a pdf print driver to the printers. I just click on print, pick Adobe PDF and the docs "print" into a pdf file on my computer. I LOVE it.
For elynx docs, I set Adobe PDF as the default printer, and it turns them into a pdf file.

Adobe Professional is commercial $oftware. It is NOT free.
Standard runs less than $100 Professional about $150-$175 Windows Software package will cost about $250

I use Mac's too and haven't found a way around it. I just tell the company sending docs that I need to have pdf's and so far haven't had anyone to refuse to download them for me.
