Splitting hairs with time

Do you enter the same time of notarization for all the notarized signatures at the signing or does each entry have a different minute. If you do split these hairs, is the time you enter when you enter the document, the ID info or when the entry is completed with the signature and thumbprint. I'm thinking that most complete their journal entries, signature and thumbprint, at the end of the signing, one time, just curious.

I use NR's MoJo and put the time of the signing. I don't see a need to 'split the hairs of time' by trying to document minute-by-minute notorial acts, however, I'm sure there are many other opinions.
