Is this correct ?

Must a person always sign the document in my presence?



If the document is an affidavit or other document requiring an oath, then the person MUST sign it in my

presence.



If the document is an acknowledgment, then the person need not sign it in front of me BUT MUST PERSONALLY APPEAR before me and acknowledge execution of the document.

You are correct.
A document requiring a jurat must always be signed in front of the notary (Sworn and subscribed before me)
An acknowledgment can be signed at any time, but the signer must appear before you and acknowledge they signed the document of their own free will.
