Well, you would proceed as you would with anyone else who lacked proper ID. You should already know that... but in CA that means credible witnesses. But with a minor that probably should NOT be his parents or other relatives, because they likely won't be impartial. Any of the documents I can imagine being signed by a minor would probably be a benefit to family members.
However, there are times when it can be done but you have to make sure the minor understands the nature of the document they are signing, just as you would with anyone else. It's appropriate to say, "Tell me about this document and why you are signing it." If the kid understands, and it doesn't appear as if he's being forced, then there's nothing really to do other than notarize as usual.
Whatever you do, though, keep good notes in your journal about the event.
