Closed in Feb.. Owner, Jen, shorted the check by $25 for no reason. She keeps telling me that the check is on the way. I told her that I was going to warn other notaries. So here it is.

During the initial call to book this signing, did this SS offer $25 less than your fee, then you quoted your fee and she agreed to your fee? IF that's the case, I continue to warn Notaries to be extremely careful when working with companies that don't normally pay the fee the Notary quotes.
They will agree to any amount just to get the job completed and short the Notary's check down to the fee they want to pay. Example: Hiring party calls Notary, describes the job then offers $75. Notary quotes $125. Company agrees and sends confirmation showing $125. Notary completes signing and company sends Notary a check for $75.
I won't work with known lowballers for this reason. They'll agree to anything and then your check will be what they want to pay you ($50, $60, $75, etc.).
