Wrong county on a California acknowledgement

In the past I've lined through the certificate and attached one with the correct county.

Is this really necessary? Can I just line through the count name and write in the correct one and initial the correction?

Like Janet said, that's totally fine. I line through and write the correct one all the time.

Remember, the notarial certificate is YOUR domain. Nobody can tell you how it's done... except the State of California.
