Does everyone get more and more calls at 75 and you have to bargain on your rate with them to get it?

No bargaining.... not usually. I have a fee that they meet, or that's it.
Of course, I am negotiable, within reason --- but I never go below my minimum, not anymore.

I do not take them at 75, tell them my rate and argue as of why this is my rate. With some it works, others will tell they will call me back after getting approval ... yeah sure ....
But FASS that used to pay XXX today offered me a 75 one and this is not the first time ... so is there a competitive trend going on and it pushes them to attempt to lower our rates?

I've stopped arguing with them -- I figure, it's none of their business why I have a specific profit margin and what that covered. I don't have to justify myself to them.
For me, I suppose it's no biggie -- since I moved to this area last year, the loan work has been low because there are a handful of people here who I know are taking super low fees, and a couple of others who are just long established and this is a pretty tight-knit business community.
That's okay... I get tons and tons of general notary calls, and I actually prefer that kind of work anyway. It's picked up like crazy, too, because the UPS store on my side of town closed in January. Even though I'm really good at the loan jobs... sometimes, they are just more trouble than they're worth, especially when I do tons of general appointments that pay better, on average, by the minute.

I don't argue either. I tell them if they keep calling they'll more than likely get someone to work for them. I also tell them the advantage of hiring me is you have someone now! They never call me back which means there's no sense of urgency. I just don't buy it when it makes a difference in helping the borrower get their loan completed because of the difference in price. A fair price.

I don't argue either - it has nothing to do with the person attempting to schedule. They aren't making the rules - just doing their job. There is always going to be someone charging less just as there are those who charge more....it's a matter of finding the right fit.

I get the calls also
They are free to meet my fees or keep calling. I had one call the other day that was offering $125 for a cash out and wanted me to cover the cost of the atty office. Both offers were a no-go for me. Quoted my fee and cost to close at atty office and quickly got the "..um, let me see if I can get approval" response. The sad thing is that the call was from a company that used to give me a lot of business and met my fees without any issues. I haven't heard from them in the last 10 months or so since they lowered their offers and extended out their pay time.
My theory is that if we are starting to receive more of these low ball offers their regular go-to notaries that normally accept them must be turning them down also or may have gotten out of the business due to not being able to make a profit. Just a theory.

I think even the notaries accepting lowball fees are sick of waiting 60 or 90+ days to receive payment. Bills are due in 30 days, not 60/90/120 days and it really wears thin on a person's nerves/patience when they need gasoline and grocery money 'now'.

I always very politely say "I'm sorry, but my base fee is". They can take it or leave it. I believe my work speaks for itself. Even the lowballers will call knowing they have to meet my fee. I take great pride in my work and professionalism.
