If you mean within the notarial block, yes - line through it and initial it, The other notary will add a loose certificate for that person.

How can you possibly have the same document signed at the same time in two different states?
I've never heard of a loan signing where the borrowers each sign their own copy of the paperwork, but anything is possible. What do they do, record two copies of the mortgage?
At any rate, do as was suggested: strike the name of the person who's not there - in the notarial block only - then initial it and notarize the other signature. Your job is done at that point.

Yes Mike...I've had a couple of those
I signed one spouse - notary in another state has other spouse....whether they record two copies of the security instrument I'm not sure....if all pages are not initialled all they have to do is conform the mortgage so two signature pages and notary acknowledgments are incorporated into the mortgage - one security instrument, two signature/notary pages....if all are initialled then I'd guess yes they record both but type at the top "duplicate original"....to avoid two liens.
