Got the docs for our new home. One doc calls for the notary to collect IDs and sign and notarize their own signature.

Yeah, I hate that, too. I usually just line through the "first being duly sworn" etc. parts. I remember one that had the verbiage of the document and the notary language so intertwined that if I lined through the inappropriate parts, it pretty much eliminated the whole intent of the document. These always seem to be from title companies. Makes me wonder where they find the attorneys who write these things...
I vaguely recall that we decided to just have the borrower sign it without notarizing, but it was a long time ago. (BTW, don't anyone take this as a recommendation on how to deal with something like this. I called the tc and we worked out a solution that was legal for me and acceptable to them.)

No, I cannot act as my own notary.
Whomever the notary happens to be. In this case it will be a bank officer.

Thanks. It's a "green" home. Solar panels on the roof, solar water heater, low E windows and other stuff. I am looking forward to watching my meter run backwards!
