What is the norm?
My loan signing class did not cover this, and it did not occur to me to ask, but from what I am reading here, I am curious - at least for loan signing notaries in California - what is the norm in terms of size of documents? Is the average 10? 20? way more?

Way more than 10, 20. Depends on the Lender and the Title Co. And even the signing service--if they are prone to include 10 pages of instructions. Also, could be state-specific as some states want 'this' included.
For that reason, I can only speak for Arkansas where 120-135 is 'average'... unless they include broker docs or a 28+/-pg. appraisal. Have had as few as 80 (once, I think) and 205 (once, also). A few in the 175-185 range.

Re: Varies on lender, loan type, Title Company, etc..
Some Title Companies throw in lots of their own affidavits and Escrow Docs on top of the lender docs. You will also have some packages that have broker docs. The norm for me as of lately has been 80-120 Pages for a single refi. I also have had packages that are 150-180pgs which are usually reverse mortgages.

I have had as few as 62 pages for a single refi..to as much as 160 if the appraisal and the lender instructions are included. I have 2 companies that I work with a lot and they are always under 80 pages..love those!
