How big is your county
Ocean County is large, I have one deal tonight from a new company and it is at the last city in my county 40 miles away. One good thing this company will pay on funding..
I think it is 50+ plus miles from one end of Ocean County to the other end, that is 3/4's the width of NJ alone.
When I live in Northern NJ as a kid if you drove 7 miles you crossed 4 cities..lol

The counties I service are large. In my profile I state I will cover parts of the counties I serve. I can be at one end of the county and be 60 miles to the other end. If the hiring entities will pay for extra travel, I'll consider it. Schedulers just don't get it sometimes. Got a call last night. "Can you be in Athens?" Greece? was my response. She was clueless. I got a good laugh and told her no. She needed a notary 5 counties away.

Person thought this town was 4 miles away from me
Said it was 40 miles away..lol. Hey pay me on funding I'll keep a standard rate for the mileage, consider it a discount for quick payment. Plus new client good will and hope to earn more business.

Hillsborough County is about 1,000 sq miles
Most areas in Hillsborough County outside Tampa's city limits are suburbs with a Tampa address. Besides Tampa there are only two other very small incorporated cities. It could easily take two hours to drive from one far end of the county to the other. Heck, with Tampa's traffic it can take 45 minutes just to drive through a zip code. Our population is 1.2 million.

Very fortunate in my area, which is densely populated and
within a 30 mile radius. We don't have counties here, cities serve as that. The farthest west point I travel to is Suffolk, VA which is about 40 minutes. Traffic is another issue here, though. There are some areas that I don't cover because of it. I can really respect those notaries that cover rural areas, because it's a completely different scenario for them. I also rarely have weather issues (expect for those nasty Nor'easters) to deal with, like snow or ice.

Maybe I'm missing something but....
according to Wikipedia, San Bernardino wins. It also says that Alaska boroughs are not considered counties and therefore, are not counted.

According to the U.S. Census Bureau, the county has a total area of 1,194 square miles (3,090 km2), of which 980 square miles (2,500 km2) is land and 214 square miles (550 km2) (17.95%) is water.
As with most areas, from here to there as the crow flies bears no resemblance to how the roads get one there...

Most super-large counties are also mostly empty
For example... "Unorganized Borough, Alaska", while it may be the largest county, is also mostly vacant. Hillsborough County is very, very dense, as are most counties with large cities. However, you can't argue that "Unorganized Borough" isn't a county - a borough is a fancy word for county. If we aren't going to consider boroughs as counties, then we can't consider Lousiana's "parishes" as counties, either.
Keep in mind that New York City - most populated city in the U.S. - is divided into five boroughs, which have borders contiguous with New York State counties: Manhattan is New York County; Queens is Queens County; Brooklyn is Kings County; Staten Island is Richmond County; The Bronx is Bronx County. Five counties, one city.
New York state also has some very unique municipality structures. Governance is usually at the town level rather than the county level - and a town will have many "villages" inside it, and a village may have hamlets, etc.
The Bahamas at one time had a similarly confusing division. My father was born in St. Matthew's Parish, which was located in the island of New Providence. The city of Nassau covers all of New Providence. St. Matthew's Parish was the administrative area in the island. It was called a parish because the closest Anglican Church to the hospital at that time was St. Matthew's Church. So is New Providence in Nassau, or is Nassau in New Providence? Is New York City in Queens County, or is Queens County in New York City?
Interesting stuff...

Jacksonville's borders were extended to include almost all
of Duval County... This was attempted in Tampa in the 70s but failed.
