Big bank indicates the name of the legal guardian on the
confirmation. The legal guardian will be doing the signing for the BO using fbo (for benefit of). Do I need any proof form the legal guardian that she can sign on behalf of the BO? Seems like the bank would have taken care of that. Any one had any experience with something like this?

I request that the signer have the original legal doc . . .
with them at the time of the signing and that they make a copy to be returned with the executed docs.

IMO, just like a POA it would have to be approved by the
lender in advance. Be sure to check with your hiring party, but if docs are drawn up that way it would indicate they approved it.
