Can they do this? TC wants to change my acknowledgement.

This topic has been somewhat addressed many times in this forum, I am aware of. The borrower stated he never uses his middle initial, so signed as Joe Schmoe. My acknowledgement had printed Joe M Schmoe. Title/escrow wants my authorization to change my acknowledgement to eliminate the middle initial, because he did not sign with it. What do you think? Can they do this with just my authorization? Even more curious, how can they do this? I know, he undersigned what was printed. He also signed the signature/name affidavit, using the same signature (without the middle initial), and I notarized that too.

I would tell the TC to send the Orginal one back.
Then you provide a correct one & send it.

No, no, no.

Title has no authority to change the notary certificate in any way, shape or form. If they want a new one, it's has to be a whole new notarization. Been discussed many times.
