I do enjoy eating healthfully as I find it increases my quality of life - just feel better overall and have good energy. I'm not a vegetarian (but don't baulk at the idea), and I do enjoy eating lots of fresh veggies. And I enjoy cooking, and feel that knowing more meatless option expands my options. I really don't see meatless dishes as a restriction, but more as an add-on. That's why I really enjoy hearing about the new recipes, link, etc. It adds to my library and awareness. Especially as I get older, and feel that some health issues can be helped with a little diet assistance, and I'm just ready to move in that direction. For me, it just feels good. |
