I believe you need to refer them to a paralegal or an attorney. As a Notary we can notarize a document but cannot interpret for them. By you supplying and assisting, you are over stepping your boundaries as a notary public in the USA. If you provide a wrong document, it can fall back on you for practicing law or giving advice. The common docs they need have to come from someone licensed to provide them, or they can present them to you. Notary Publics in Mexico are first licensed attorneys in Mexico, then they apprentice in notaryship law and practice. That is completely different than what we are in FL.
