On every acknowledgment you ask him if he signed it, before notarizing it, he's acknowledging that he signed it . On the Jurats he will have to resign in front of you before you can notarize it. The rest of the document are O.K. if he already signed. I would check to make sure he signed in the correct place and any other information is missing. Also that the signature matches the signature on his ID.
