if you're already out of town until Wednesday and they want it done sooner - what options do you have?

First of all I'd ask them to send me copies of my mistakes - I want to see it before I own it (I realize you're away but I'd be jumping through hoops to get my hands on this info). If in fact it was all your error, then ask them if it can wait til Wednesday when you get back and offer to do it then immediately upon your return. Seeing as the PUD Rider and Note (two of the most critical docs in the package) were signed incorrectly, you're going to have to eat the cost of getting them done and shipped back and pray you CAN get it done before funding.

Own your mistake up front and they MAY not be as hard on you - but I'd guess you can kiss this company goodbye after this.

I'd then, respectfully, suggest you find a good signing course (if you insist on continuing in this field) and learn how to do signings before you touch another loan package.
