the packages prior to closing (my work volume was not as high as some) - I'd list the docs in the journal prior to going to the signing and at the table I just worried about signer ID and signature.

As for notarizing at table as opposed to later...that's a no no here in FL and many other states. Here in FL, notarizations MUST be done at the table in front of the signers. I'd suggest checking your state laws regarding this. Not to mention the risk of "if you leave it for later, what happens if something happens to you and later either never comes or comes much later than you anticipated".
