 Notary journaling for mortgage signings

Keeping a journal for regular one-off notarizations is a snap, but I haven't found a good flow yet for mortgage signings. How do you all do them, what is your process for those?

Also, in looking through previous forum subjects, I see that not all notaries will notarize their part in front of the clients, they just have the client fill in their information and then notarize later. Is that more the exception than the rule?

I am getting my feet wet with mortgage signings and still working on a flow that is good for me. I have been having the client fill out their stuff first, then I go back through and do my signing and stamping, and then have them do the journal part but I think I could probably shave time off by doing it differently...
