I just sit next to the signer, go over the HUD first, then whatever their printing order, is the way it goes. I do not separate anything in order of preference unless they need it scanned back. Then I will pull those docs, sign them first,paper clip them, then start of 2nd part of package.
I can usually get through a closing 30-40 minutes unless we excessively start gabbing. At the end I present them their copy package. I have never had an issue doing it this way. I like simplicity. There Is no right way or wrong, but I never get into paper shuffling at a closing, my only priority is the HUD and Fannie Mae Waiver and Release if they have one...the rest when it comes along. It all has to be signed. Just the way I do it, and pretty fast.
